Education B.S. ’04 Location Columbus, Ohio Mei-Ling Shotts is a global expert in food safety and quality management with more than 20 years of experience supporting Fortune 500 food and beverage companies. She specializes in plant operations, third-party manufacturing, risk assessment, auditing and regulatory compliance across categories including proteins, dairy, confectionery and produce. Her expertise spans food defense, sustainability, ingredient sourcing and emerging technologies such as biotechnology, precision fermentation and CRISPR. She is also skilled in HACCP implementation, supplier auditing, recall management and food toxicology. Shotts has presented her research internationally and is active in several industry associations. She holds a B.S. in biochemistry with a business minor from Florida State University and a Ph.D. in food science from Ohio State University.
